Dino Lavorini

Dino Lavorini is the Regional VP of Operations with Jose Andres Group. Dino joined Union Square Hospitality Group in 2005 as one of The Modern’s opening Maître d's. He worked his way up from Maître d' to General Manager before assuming the role of Director of Operations of The Modern, Cafe 2, Terrace 5, the Staff Cafeteria at the Museum of Modern Art, Untitled and Studio Café at the Whitney Museum of American Art. In 2017, Dino was named a USHG Senior Director of Restaurant Operations.
During Dino’s time at Art Food, The Modern has received three stars from the New York Times, four James Beard Foundation Awards, and two Michelin Stars. In 2015, The Modern became the first restaurant within Danny Meyer’s Union Square Hospitality Group to eliminate tipping as a means to raising wages for employees, an initiative in which Dino played an instrumental leadership role.
Prior to joining the team at The Modern, Dino received his MBA from the University of Pittsburgh in Pennsylvania. He spent two years in Italy, attending the Apicius Cooking School on a scholarship from the James Beard Foundation, as well as working in restaurants, honing his Italian language skills, and teaching English to business professionals in Florence. Dino earned his Bachelor’s degree in Marketing from Penn State, and is a native of Butler, Pennsylvania.
